French cut green bean salad with a honey dijon and dill vinaigrette

Super simple, but very tasty green bean salad with a honey dijon and dill vinaigrette. I love cutting my green beans with a french cut slicer because they just combine better with dressing and just taste better IMO. Also the slicer is cheap and lasts forever 👌🏼👌🏼Great easy side idea or could be a great add to pretty much any protein.

Equipment

  • French cut green bean slicer https://amzn.to/3D8ukTr

Ingredients

  • 1 lb Green beans

The vinaigrette

  • 1 tbsp Whole grain dijon mustard
  • 1/2 cup EVOO
  • 2 tbsp Red wine vinegar
  • Handful of chopped dill
  • 1 clove garlic, minced
  • 1 tbsp honey (hot or regular)

Instructions

  • Slice green beans and steam for about 3 min. When the green beans are sliced this way they don't take as long to cook and you want to make sure they’re still crunchy and not overcooked.
  • Make your vinaigrette and pour over green beans. Toss to combine. Enjoy!
