Whipped Cottage Cheese Dip with Fig Jam
Ingredients
For the whipped cottage cheese dip:
- 1 cup full-fat cottage cheese
- 4 oz whipped cream cheese
- 2 tbsp honey
- ¼ tsp kosher salt
- Freshly cracked black pepper to taste
For the bacon:
- 6 slices bacon
For topping:
- ⅓ cup fig jam
- ¼ cup roasted pistachios roughly chopped
- Flaky sea salt optional
For Serving:
- Toasted sourdough, crackers, or crostini
Instructions
- Cook the bacon: Add the bacon to a skillet over medium heat and cook until crisp, about 8–10 minutes, flipping as needed. Transfer to a paper towel-lined plate to cool, then finely chop into bacon bits.
- Make the whipped cottage cheese: Add the cottage cheese, softened cream cheese, honey, kosher salt, and a few cracks of black pepper to a food processor or high-speed blender. Blend until completely smooth and creamy, scraping down the sides as needed.
- Assemble the dip: Spoon the whipped cottage cheese mixture onto a shallow serving plate or bowl and spread it into an even layer. Spoon the fig jam over the top, leaving some of the cottage cheese mixture visible.
- Finish and serve: Sprinkle with the bacon bits and crushed pistachios. Finish with a drizzle of honey and a pinch of flaky sea salt, if desired. Serve with toasted sourdough, crostini, or crackers.
