This smoked salmon avocado toast with a jammy egg is the ultimate brunch toast.

This is one of my breakfast faves: Smoked salmon avocado toast with a lemony dill yogurt, radishes and best of all, an everything bagel seasoning coated jammy egg. This is truly the ultimate avocado toast. To kick off making this, gather your ingredients. Eggs, avocados, smoked salmon, sourdough bread, greek yogurt, dill, lemon juice, everything but the bagel seasoning (the classic from Trader Joe’s!), radishes, and some salt & pep. You’ll make your lemony dill yogurt sauce and layer that over a toast piece of sourdough. It adds such a nice flavor and to this I love it as a base. The real secret here is once you cook up your jammy egg, you’ll roll it in the everything but the bagel seasoning. It has such a nice crisp crunch to it not to mention all the goodness with it. This breakfast toast is full of protein and flavor — it’s a super satisfying brunch. It’s the perfect personal breakfast or make a few and share it with the whole fam! Smoked salmon avocado toast with an EBS jammy egg
Ingredients
- 1 egg
- 1/2 avocado
- 3 slices of smoked salmon
- 1 slice of sourdough bread
- 1/2 cup regular or greek yogurt
- 2 tbsp dill
- 1 tbsp lemon juice
- everything but the bagel seasoning
- 2 radishes
- sea salt
- pepper
Instructions
- Heat a deep pot with water and when it comes to a boil, carefully add eggs in. Cook for anywhere from 6-7 min for a jammy egg.
- While eggs are cooking, prep a bowl with ice water and dunk the eggs in when they’re done cooking. When cool enough to touch, peel eggs.
- Add everything bagel seasoning to a plate. Roll egg in seasoning until full coated.
- Coat bread in olive oil and cook for 2-3 min on medium heat.
- Meanwhile, combine dill, yogurt, lemon juice, salt and pepper in a bowl. Add to toast. Slice avocado and radish. Start adding all your ingredients to your toast staring with the dill yogurt spread. Then add radish slices, followed by smoked salmon, and then avocado slices. Top with everything bagel jammy egg. Enjoy!
