
These little guys are fun: roasted fingerling potatoes in a sour cream truffle hot sauce. I cooked the potatoes in a truffle/butter then drizzled them with the sauce and some fresh chopped chives. Great little app or side idea.

Roasted Fingerling Potatoes in a sour cream truffle hot sauce
Ingredients
- 1 lb fingerling potatoes
- 4 tbsp butter melted
- 2 tbsp olive oil
- 1 tbs[ truffle oil
- Flaky sea salt
- Pepper
- 1/4 cup sour cream
- 2 tbsp @sauce truffle hot sauce (adjust depending on your spice levels)
- Chives for topping
Instructions
- Wash and slice potatoes in half. Add butter, olive oil, truffle oil, salt to the potatoes. Toss so evenly coated and they lay face down on a baking sheet. Bake on 425 for 20-25 min.
- A sour cream, chopped chives and truffle hot sauce to a bowl. Stir until full combined.
- Remove potatoes and transfer to a plate. Top with sauce, flaky sea salt and more chives. Enjoy!
