This garlic confit & chive whipped cottage cheese dip is creamy, bright, and packed with flavor. The garlic confit is slowly cooked with plenty of lemon rind and red pepper flakes until soft and fragrant, then blended with cottage cheese, fresh chives, and an extra squeeze of lemon for a smooth, tangy base. The result is a light yet luscious dip with mellow garlic flavor and a little citrusy kick.
To finish, it’s topped with a punchy mix of chopped olives and shallots that brings the perfect pickley bite. A spoonful of that golden confit oil drizzled over the top ties everything together and adds even more richness. Garlic & Chive Whipped Cottage Cheese Dip
Ingredients
For the garlic confit:
- 1 head of garlic with the skin peeled off (or enough to fill your ramekin)
- The peeled rind of 1 lemon
- Sea salt & Pepper
- Extra virgin olive oil
- Red pepper flakes
The dip:
- 1 cup cottage cheese
- 1/4 cup fresh chopped chives
- Confit (see above)
- Lemon juice from rind above
- Sea salt
- Pepper
- Red pepper flakes
The olive blend:
- 3/4 cup sliced Castelvetrano olives
- 3/4 cup sliced black olives
- 2 tbsp pine nuts
- 1 diced shallot
- 2 tsbp minced capers
- Squeeze of lemon
- Flaky sea salt
- Pepper
Instructions
- Preheat oven to 250. Using a veggie slicer, peel the rind off of lemon and add to a ramekin. Add peeled garlic and a sprinkle of red pepper flakes. Cover with enough olive oil to submerge the garlic and season with salt and pepper. Cook for about 2 hours or until garlic is softened and the oil is bubbly. Let confit cool.
- Combine olive blend ingredients in a bowl. Season to taste.
- Add cottage cheese, confit (reserving a few cloves for topping at the end), chives, lemon, salt and pepper to a food processor and blend until smooth and combined. Season to taste. Add to a shallow bowl, spreading in an even layer. Add olive blend around the parameter of the bowl. Add a few cloves to the center and top and a nice drizzle of the confit oil. Serve with whatever you feel like snacking on. Enjoy!
