Here’s the recipe for the fancy BLT I recently made, featuring gorgeous heirloom tomatoes and a few twists on the classic sandwich. This BLT is anything but ordinary, with hot honey-candied bacon, crisp romaine lettuce, juicy heirloom tomatoes, and a kick of sriracha aioli—all piled high on perfectly toasted sourdough bread. The combination of sweet, spicy, and savory flavors makes this sandwich absolutely irresistible.
I didn’t have hot honey on hand, so I decided to get a little creative and make my own! It was surprisingly easy—just a simple blend of honey and chili flakes to give it that perfect balance of heat and sweetness. The candied bacon is the real star here; it has that crispy, caramelized texture that’s both crunchy and flavorful, adding a unique twist to the classic bacon strip.
For the bread, I went with sourdough because it adds a slightly tangy flavor and a great texture. It’s important to toast both sides of the bread to get that perfect crispness—trust me, it takes the sandwich to another level. Layering the romaine lettuce and juicy heirloom tomatoes in between gives the sandwich that fresh, crisp contrast to the richness of the bacon and aioli.

Fancy BLT: Hot honey candied bacon, romaine and tomato with a sriracha aioli
Ingredients
For the hot honey:
- 1 tbsp apple cider vinegar
- 3/4 cup honey
- 1 tbsp red pepper flakes
- Bacon
- Romaine
- Heirloom tomato
- Sriracha aioli (I usedStonewall kitchen)
- Bread of choice
Instructions
- Make your hot honey. In a pan, combine honey and chili flakes over medium heat. When that starts to melt, add in 1 tbsp apple cider vinegar. Stir to combine and then remove from heat and let cool.
- Preheat oven to 375. Line a baking sheet with parchment paper and then add slices of bacon to the sheet. Brush hot honey over one side of the bacon and back for about 15 min or until crispy and golden.
- Coat bread in olive oil and toast in a pan for about 2-3 min per side. Bonus, use from of the bacon grease instead of oil if you're feeling especially fancy.
- Spread aioli of choice onto bread. Add chopped bacon, chopped romaine, sliced heirloom tomato. Top with another piece of bread. Enjoy!
