Ingredients
The tuna salad:
- 5 oz spicy or regular canned tuna
- 1/2 cup Cottage Cheese
- 1 tbsp lemon juice + more as needed
- 1 tsp olive oil
- 1 tsp dijon mustard
- 1 stalk of celery, chopped
- Chopped herbs of choice (I like parsley, basil, scallions, chives)
- Sea salt
- Pepper
Instructions
- Preheat oven to broil.
The tuna salad: Combine tuna salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy or citrusy you want it to be.
- Make sandwich: Add shredded dill havarti cheese to slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of tuna salad to the sandwich and top with microgreens or arugula. Close and enjoy!
