This Spicy Salmon Melt is a simple upgrade to a classic sandwich. Smoked salmon is layered over whipped cream cheese with scallions and a touch of heat, then topped with shredded cheese. As it toasts on brioche, everything melts together into a balanced bite that’s creamy, smoky, and just a little spicy.
It’s an easy option for lunch or a quick dinner that still feels put together. The brioche turns golden on the outside while staying soft inside, holding all the layers together. Finish with extra scallions or a squeeze of lemon to brighten it up, and it’s ready to go.
The Tinfish:
I like to use Fishwife smoked salmon because not only is the flavor just so superior to other tinfish, but they have spicy options, ones in olive oil and many many more different options. This would also be good with any of their other fish varieties!

Spicy Salmon Melt
Ingredients
- 8 oz Tinned Smoked Salmon (I like Fishwife)
- 2 tbsp whipped cream cheese (you could sub for mayo)
- 1 tsp Honey chili crisp (See note)
- 1 scallion, slices
- 4 slices brioche bread
- 1/4 cup shredded cheese of choice (I suggest something somewhat mild)
- 1 tsp butter
- sea salt
- pepper
Instructions
- Combine smoked salmon, cream cheese, chili crisp, chopped scallion into a bowl until combined. Season to taste. You might want to adjust depending on how creamy you want it to be.
- Add salmon salad to brioche bread and top with shredded cheese. Close sandwich and add to a buttered skillet.
- Cook on medium to low heat for about 3-5 min or until cheese has melted. Slice and enjoy!
