Eggs, veg and caramelized cheddar breakfast sandwich 

One of my favorite ways to stack a homemade English muffin- this is my egg sandwich with veggies and caramelized cheddar. These are made on homemade sourdough discard English muffins.

Let me tell you about one of my all-time favorite ways to stack a homemade English muffin. This is my go-to egg sandwich loaded with veggies and a layer of caramelized cheddar goodness. It’s a flavor-packed, satisfying breakfast that always hits the spot.

Here’s how I build it: I start by sautéing a mix of peppers and onions until they’re soft and slightly caramelized. Then, I fold them into fluffy scrambled eggs along with a generous amount of shredded cheese. I’m obsessed with Trader Joe’s Caramelized Onion Cheddar; it has this incredible savory-sweet flavor that really elevates any dish, but it’s especially dreamy in a breakfast sandwich. As the eggs cook, the cheese melts into every bite, creating this oozy, gooey texture that’s just irresistible. Add some avocado and salsa and that’s it. Truly a perfect breakfast sandwich.

Egg sandwich with veggies and caramelized cheddar

Ingredients

  • 1 Sourdough English Muffin Recipe is linked
  • 1/2 Avocado
  • 2 Eggs
  • 1 Pepper
  • 1 Small onion
  • 1 Jalapeño
  • 1/2 cup Trader Joes caramelized onion cheddar
  • 3 tbsp Butter
  • 2 tbsp Salsa of choice

Instructions

  • Thinly slice peppers and onions and dice the jalapeño. Add to a nonstick skillet with a tbsp of butter, salt and pepper and cook on medium to low heat for about 20 min, stirring often. You want the peppers and onions to get super jammy and cook down. If the pan gets dry, I like to add a little water and cover so they steam nicely. When done, remove and set aside.
  • Whisk 2 eggs and grate the cheese. Add butter to same skillet and when pan is hot, pour over eggs and move pan around to get an even layer of eggs. Add a few scoops of cooked veggiesm, along with grated cheese. Fold in each side like a present and let cook for about 2 min on low heat until egg has finished cooking.
  • Toast English muffin and add half an avocado. Mash into the English muffin and add a little salsa, and your eggs. Slice and that's it. Enjoy!
