A bright pink roasted cherry and whipped goat cheese toast perfect for Valentine’s Day!

In this Valentine’s Day recipe edition, we are making a roasted cherry and whipped goat cheese toast. It’s vibrant, fun, pink and oh-so delicious. The blend of sweet cherries, thyme, and creamy goat cheese on a crispy piece of bread will make this the perfect thing to make as a Galentine’s Day appetizer and you don’t need much at all to get it started. What you’ll need for the roasted cherries is cherries (of course), thyme, salt & pepper, EVOO, and walnuts. You’ll roast all of that together in the oven until they are nice and caramelized. The whipped goat cheese is super easy to make, you’ll just need a food processor to throw the ingredients in. This tangy spread will complements the sweetness of the cherries. Once your cherries are roasted and your goat cheese is all ready, you’ll add it to your favorite bread (I used sourdough here!) and top it with walnuts. Bright Pink Roasted Cherry and Whipped Goat Cheese Toast

Ingredients

  • Bread of choice this is a sourdough
  • A few sprigs of thyme
  • 1 cup cherries pitted (if you don’t have a pitter, you can use a chopstick)
  • A nice glug of good olive oil
  • 1 tbsp sugar
  • Sea salt
  • Pepper
  • A few sprigs of thyme
  • 1/4 cup walnuts chopped

The whipped goat cheese:

  • 1/4 cup goat cheese
  • Squeeze of lemon
  • 1 tsp hot or regular honey
  • 1 tsp olive oil
  • Salt
  • Pepper

Instructions

  • Step 1: Preheat oven to 425. Add pitted cherries to a bowl with thyme, olive oil, salt, sugar and a drizzle of lemon juice. Transfer to a parchment lined baking sheet and cook for about 15 min or until cherries are roasted and caramelized.
  • Step 2: Add half the cherries to a food processor with goat cheese, lemon, honey, olive oil salt and pepper. Blend until full whipped and a bright pink color.
  • Step 3: Coat bread in olive oil and cook for 2-3 min per side. Spread whipped goat cheese on the toast along with the remaining full cherries. Sprinkle with walnuts.
