Roasted Cherry and Whipped Goat Cheese Toast

Ingredients

  • Bread of choice this is a sourdough
  • A few sprigs of thyme
  • 1 cup cherries pitted (if you don’t have a pitter, you can use a chopstick)
  • A nice glug of good olive oil
  • 1 tbsp sugar
  • Sea salt
  • Pepper
  • A few sprigs of thyme
  • 1/4 cup walnuts chopped

The whipped goat cheese:

  • 1/4 cup goat cheese
  • Squeeze of lemon
  • 1 tsp hot or regular honey
  • 1 tsp olive oil
  • Salt
  • Pepper

Instructions 

  • Preheat oven to 425. Add pitted cherries to a bowl with thyme, olive oil, salt, sugar and a drizzle of lemon juice. Transfer to a parchment lined baking sheet and cook for about 15 min or until cherries are roasted and caramelized.
  • Add half the cherries to a food processor with goat cheese, lemon, honey, olive oil salt and pepper. Blend until full whipped and a bright pink color.
  • Coat bread in olive oil and cook for 2-3 min per side. Spread whipped goat cheese on the toast along with the remaining full cherries. Sprinkle with walnuts.
