Preheat oven to 425. Add pitted cherries to a bowl with thyme, olive oil, salt, sugar and a drizzle of lemon juice. Transfer to a parchment lined baking sheet and cook for about 15 min or until cherries are roasted and caramelized.
Add half the cherries to a food processor with goat cheese, lemon, honey, olive oil salt and pepper. Blend until full whipped and a bright pink color.
Coat bread in olive oil and cook for 2-3 min per side. Spread whipped goat cheese on the toast along with the remaining full cherries. Sprinkle with walnuts.
