A bright pink roasted cherry and whipped goat cheese toast perfect for Valentine’s Day!

Roasted Cherry and Whipped Goat Cheese Toast
Ingredients
- Bread of choice this is a sourdough
- A few sprigs of thyme
- 1 cup cherries pitted (if you don’t have a pitter, you can use a chopstick)
- A nice glug of good olive oil
- 1 tbsp sugar
- Sea salt
- Pepper
- A few sprigs of thyme
- 1/4 cup walnuts chopped
The whipped goat cheese:
- 1/4 cup goat cheese
- Squeeze of lemon
- 1 tsp hot or regular honey
- 1 tsp olive oil
- Salt
- Pepper
Instructions
- Preheat oven to 425. Add pitted cherries to a bowl with thyme, olive oil, salt, sugar and a drizzle of lemon juice. Transfer to a parchment lined baking sheet and cook for about 15 min or until cherries are roasted and caramelized.
- Add half the cherries to a food processor with goat cheese, lemon, honey, olive oil salt and pepper. Blend until full whipped and a bright pink color.
- Coat bread in olive oil and cook for 2-3 min per side. Spread whipped goat cheese on the toast along with the remaining full cherries. Sprinkle with walnuts.
