This avocado toast is taken to the next level with tomatillo salsa verde with hot pepper sardines!

Meet my latest breakfast obsession! Avocado toast with a fried egg and tomatillo salsa verde with hot pepper sardines. If you haven’t tried Fishwife hot pepper sardines, this is your sign 🙌🏼. I’m a huge fan of Fishwife and love incorporating their products into new recipes. I love how much flavor this toast has from the salsa verde and then the hot pepper sardines! It’s such a treat for a weekend brunch and so easy to make. I started off by making the salsa verde, which included some lime juice, scallions, garlic, tomatillos, shallots, olive oil, some salt, the Fishwife hot pepper sardines, and some cilantro! Just throw it all in a blender and your salsa is complete. Easy peasy! I used sourdough for this toast, layered on some avocado and a fried egg and completed it with the salsa verde! Avocado toast with a fried egg and tomatillo salsa verde with hot pepper sardines
Ingredients
The salsa:
- The Juice of half a lime
- A few scallions
- 1 garlic clove
- 4 tomatillos, husked and quartered
- Pinch of flaky sea salt
- 1/4 cup Olive oil
- 1 small shallot
- 1 Fishwife hot pepper sardine
- Handful of cilantro
The rest:
- 1 egg
- 1/2 an avocado
- bread of choice
- 1 tbsp butter
- Olive oil
Instructions
- Make salsa by combining all ingredients in a food processor or immersion blender. Blend until smooth. Season to taste.
- Add butter to a skillet and crack and egg in the middle. Season with salt and pepper. Cook however you like your eggs and then remove from pan.
- Coat bread in olive oil and cook in same skillet for 2-3 min per side.
- Slice avocado and add to bread. Add egg and drizzle with salsa. Enjoy!
