
Creamy whipped gorgonzola toast with greek yogurt, topped with pancetta and plum slices…It finally feels like Fall outside, so we’re making some Fall toasts! This whipped gorgonzola is super tasty and can be made in advance and stored in the fridge for apps/ crostinis, whatever you want!

Whipped gorgonzola toast with pancetta and plum slices
Ingredients
- 3/4 cup gorgonzola or blue cheese
- 1 tbsp heavy cream (optional)
- 1 tbsp heaping greek yogurt + more to taste
- sourdough bread
- plum or other stone fruit
- 1/4 cup pancetta, cubed
- flat leaf parsley for garnish
- sea salt
- pepper
Instructions
- Cube pancetta and add to a small skillet. Cook until browned and crispy. Transfer to a paper towel lined plate.
- Meanwhile, combine yogurt, gorgonzola and cream to a food processor. Season with salt and pepper.
- Coat bread in olive oil and cook in a skillet for 2-3 min per side.
- Add whipped spread to toast and top with sliced plums (or other stone fruit), pancetta and chopped parsley. Enjoy!
