Whipped gorgonzola toast with pancetta and plum slices

This toast is one you’ll make on repeat. Say hello to creamy whipped gorgonzola toast with Greek yogurt, topped with pancetta and plum slice. Perfect for this weather as it finally feels like fall outside, so we’re making some fall toasts! This whipped gorgonzola is super tasty and can be made in advance and stored in the fridge for apps or crostinis, whatever you want! You just need a food processor to whip together the ingredients (gorgonzola, cream, and Greek yogurt). This toast is full of flavor and the pancetta adds such a good salty addition. You’ll cut it into cubes and put it in a frying pan to cook. You’ll top this toast off with the pancetta and some sliced plums. I love using plums in dishes and don’t get to often. The plum adds a hint of sweetness to round out this as a whole! I used sourdough bread for this, which holds all of the ingredients nicely on top. Whipped gorgonzola toast with pancetta and plum slices

Ingredients

  • 3/4 cup gorgonzola or blue cheese
  • 1 tbsp heavy cream (optional)
  • 1 tbsp heaping greek yogurt + more to taste
  • sourdough bread
  • plum or other stone fruit 
  • 1/4 cup pancetta, cubed
  • flat leaf parsley for garnish 
  • sea salt
  • pepper

Instructions

  • Cube pancetta and add to a small skillet. Cook until browned and crispy. Transfer to a paper towel lined plate.
  • Meanwhile, combine yogurt, gorgonzola and cream to a food processor. Season with salt and pepper. 
  • Coat bread in olive oil and cook in a skillet for 2-3 min per side.
  • Add whipped spread to toast and top with sliced plums (or other stone fruit), pancetta and chopped parsley. Enjoy!
