Tuna, mango & tuna jalapeño summer rolls


I got my hands on some fresh caught tuna so had to make mango & tuna jalapeño summer rolls! These are really fun to make and quite easy. They’re kind of a choose your own adventure, both with the fruits or veggies you pick, but also with the protein you add. I added fresh tuna, avocado, jalapeño, red onion, furikake and a little cilantro and lime. I then dipped in some soy sauce and topped with sesame seeds. You can find spring roll wraps in most grocery stores.

Ingredients

  • Spring roll wrappers
  • Fresh tuna
  • Yellow mango
  • Avocado
  • Lime
  • Jalapeño, thinly sliced
  • Red onion
  • Furikake
  • Sesame seeds

Instructions

  • The proportions on this are dependent on how many you want to make, but I would suggest slicing all your veggies/fruit and fish into strips. Each roll takes about 1 slice of each.
  • Dip your rice paper in water and assemble each roll with a little handful of each ingredient. Careful not to overstuff. Fold and roll! (I watched a YouTube video for how to roll which was helpful). Top with sesame seeds and dip in soy sauce, sweet chili sauce or another sauce of choice. Enjoy!
