This is my slightly fancier take on a tuna melt that’s cheesy, a little spicy and griddled until gets nice and crispy on the outside. I mix spicy tuna with a little cream cheese, scallions and then combo of kewpie mayo, sesame oil, soy, sweet chili and sriracha. Griddle some brioche bread and a little mozzarella cheese. The spicy tuna:
I like to use Fishwife canned tuna because not only is the flavor just so superior to other tinfish, but it’s the perfect balance of buttery with just a kick of spice. They also have a non spicy olive oil version if spice isn’t your thing!

Spicy tuna melt
Ingredients
The tuna salad:
- 3 oz Spicy tuna I like to use Fishwife
- 2 Scallions sliced
- 2 tbsp Whipped or regular cream cheese
- 1 tbsp Soy sauce
- 1 tsp Sriracha
- 1 1/2 tbsp Kewpie mayo
- 1 tsp Sweet chili sauce
- Furikake for topping
The rest:
- Brioche bread (or whatever bread you prefer)
- Mozzarella cheese
- Salt
- Pepper
- Butter for griddling
Instructions
- Preheat oven to broil. Combine salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy or spicy you want it to be.
- Add melted mozzarella cheese to two slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of tuna salad to the sandwich and close.
- Melt butter in a skillet and add your melt. Cook on medium to low heat with a top until the other side of the bread is browned and cheese and tuna salad have melted together. Enjoy!
