1/4cupshredded cheese of choice (I suggest something somewhat mild)
1tspbutter
sea salt
pepper
Instructions
Combine smoked salmon, cream cheese, chili crisp, chopped scallion into a bowl until combined. Season to taste. You might want to adjust depending on how creamy you want it to be.
Add salmon salad to brioche bread and top with shredded cheese. Close sandwich and add to a buttered skillet.
Cook on medium to low heat for about 3-5 min or until cheese has melted. Slice and enjoy!

Note: I used Momofuku Honey Chili Crisp, but you could substitute regular honey and chili crisp or hot honey. Measurements differ depending on preferred spice levels.
