Soft Scramble Breakfast Sandwich with Caramelized Onions

This ultimate breakfast sandwich with caramelized onions and a chipotle sauce is perfect for Sunday brunch.

I used to live next to this delish sandwich place Effin Egg and they had this breakfast sandwich that I still dream about! It had caramelized onions, soft scrambled eggs and this chipotle sauce on a warm brioche bun. I have since moved so I decided to recreate this at home and I am sooo glad I did. This is the perfect Sunday morning brunch idea. The caramelized onions are the real show stopper here. Give yourself at least 25 minutes to make sure you cook these to their fullest caramelized potential! You’ll cut your onions pretty thin here, add butter to a pan, and throw the onions in. Then add thyme and some red wine to the skillet, and cook for about 25 minutes. Then make your soft scramble – add some chives or scallions for extra flavor with the eggs! Once everything is all cooked you’ll spread the chipotle mayo on a toasted bun, and assemble your eggs and onions! I topped everything with melted pepper jack and it truly is a great sandwich combo. Soft Scramble Breakfast Sandwich with Caramelized Onions a Brioche Bun

Ingredients

For the caramelized onions (this will yield extra onions, but its great to have them on hand)

  • 1 large onion
  • A few sprigs of thyme
  • 3 tbsp butter
  • A nice glug of red wine
  • Sea salt pepper

The Rest:

  • 1 brioche bun
  • A few slices of pepper jack
  • 2 eggs m
  • Chipotle Mayo
  • 1 scallion or chives

Instructions

  • Using a mandolin or knife, slice onions pretty thin. Add butter to a large skillet, and then add in your onions. Cook for a few min, and then add thyme and red wine. Cover and cook, stirring every so often. Continue this for about 25 min or until onions are significantly reduced and nicely browned and caramelized
  • Slice bun and add cheese to bun. Toast for a few minutes to melt the cheese.
  • Meanwhile add oil or butter to a small pan. Whisk eggs in a bowl. When pan is very hot and butter is melted, pour eggs onto pan. Using a spatula, push eggs toward center of pan until they form ribbons. Add sliced scallions of chives. Season with salt and pepper. When they are 3/4 cooked, turn off heat and let them finish.
  • Add chipotle mayo or other sauce of choice to bread. Add eggs and onions. Enjoy!
