This shaved egg over smoked salmon on a bagel is a fun way to elevate brunch!

It’s not the weekend if I’m not posting something with smoked salmon 👌🏼👌🏼 definitely been on a real kick recently! This is a twist on a typical egg salad and is mayo-free. To make this egg salad you’ll start by boiling your eggs. Make sure they’re more on the cooked side so they’re firm for when you grate them. I usually cook them for about 8 minutes. Once cooked you’ll make your egg salad! Instead of mayo, I used creme fraiche! You can also use Greek yogurt as an alternative. Add lots of capers, fresh dill, olive oil and lemon! You’ll grate the hard boiled egg into the mixture and combine. Once your egg salad is all set, you’ll scoop it onto a bagel with some avocado and smoked salmon. Top with everything but the bagel seasoning and enjoy. I like Trader Joe’s Everything But the Bagel Seasoning, but if you don’t have a TJ’s near you, this one from Thrive is great! Shaved Egg Smoked Salmon Bagel
Ingredients
The egg salad:
- 2 tbsp creme fraiche or Greek yogurt
- 1 tbsp chopped caperberries or capers
- Lots of fresh dill
- Drizzle of olive oil
- 1/2 lemon
- Salt
- Pepper
- 2 eggs
The rest:
- Bagel
- 1/2 avocado
- Smoked salmon
- Everything but the bagel seasoning
Instructions
- Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
- Combine egg salad ingredients to a bowl. Using a grater, grate eggs into a bowl. Give everything a mix until smooth and combined.
- Slice bagel and scoop out middle. Toast and add scoops of egg salad, top with avocado, smoked salmon and everything but the bagel seasoning. Enjoy!
