Shaved Egg Smoked Salmon Bagel

Ingredients

The egg salad:

  • 2 tbsp creme fraiche or Greek yogurt
  • 1 tbsp chopped caperberries or capers
  • Lots of fresh dill
  • Drizzle of olive oil
  • 1/2 lemon
  • Salt
  • Pepper
  • 2 eggs

The rest:

  • Bagel
  • 1/2 avocado
  • Smoked salmon
  • Everything but the bagel seasoning

Instructions 

  • Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
  • Combine egg salad ingredients to a bowl. Using a grater, grate eggs into a bowl. Give everything a mix until smooth and combined.
  • Slice bagel and scoop out middle. Toast and add scoops of egg salad, top with avocado, smoked salmon and everything but the bagel seasoning. Enjoy!
