Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
Combine egg salad ingredients to a bowl. Using a grater, grate eggs into a bowl. Give everything a mix until smooth and combined.
Slice bagel and scoop out middle. Toast and add scoops of egg salad, top with avocado, smoked salmon and everything but the bagel seasoning. Enjoy!
