Pesto focaccia breakfast sandwich

This pesto focaccia breakfast sandwich is the ultimate brunch food.

The Deets

This recipe is inspired by a sandwich I had at The Hoot in Maine. It is a delicious, farm-to-table spot, and its breakfast sandwiches are unmatched. This one has housemade focaccia bread, pesto, tomato, bacon, eggs, and avocado. Truly so good. You can use store-bought focaccia for this, or make your own. My go-to homemade recipe is from Bon Appetits No Knead recipe. If you are in a pinch, store-bought works totally fine, too! I also whipped up a homemade pesto for this — which is super easy. Just combine all the ingredients into a food processor. You’ll cook up your bacon and eggs and add them in between the bread. I personally like to toast my bread, so you can easily do this in a frying pan. Spread a dollop of pesto onto your focaccia bread and assemble the sandy! This breakfast sandwich is a treat. I can’t recommend it enough, especially for weekend brunch. The full recipe is below! If you enjoyed this breakfast idea, don’t worry I have more where this came from. • 2 eggs
  • 1 tbsp butter
  • 3 slices sharp cheddar
  • 1/2 avocado
  • 2 slices tomato

  • 3/4 cup basil leaves
  • 3/4 cup olive oil
  • 2 garlic cloves
  • 1/2 cup parmesan cheese
  • 1/4 cup pine nuts
  • sea salt
  • pepper

  • In a food processor, combine pesto ingredients and blend until smooth. Season to taste.
  • Add bacon to a pan on medium heat and cook until desired level of crispiness. Transfer to a paper towel lined plate.
  • Add butter to a skillet and crack 2 eggs. Season with salt, pepper and red pepper flakes. Cook until desired, I did about 2-3 min for a nice over easy egg.
  • Toast focaccia bread in a skillet until golden brown.
  • Assemble your sandwich: Spread pesto on both sides of the focaccia. Add sliced avocado, eggs, bacon, tomato and cheddar. Enjoy!
