This buttery Lobster BLT takes the classic sandwich and gives it a summer upgrade. Warm lobster tossed in melted butter gets layered onto toasted ciabatta with crispy bacon, seasoned tomatoes, arugula, and a creamy tarragon lemon mayo. It’s fresh, savory, and feels like the kind of sandwich you’d order near the water in the middle of summer.

The tarragon lemon mayo really ties everything together here. The lemon keeps it bright while the crème fraîche adds richness that works perfectly with the lobster. Paired with salty bacon, juicy tomatoes, and crusty ciabatta, this sandwich hits every texture in the best way.

Lobster BLT

Ingredients

Serves 2 sandwiches

Tarragon Lemon Mayo:

  • 1/3 cup mayonnaise
  • 1/4 cup crème fraîche
  • 1 tbsp fresh tarragon, chopped
  • 1 tbsp dijon mustard
  • 1 tsp lemon juice
  • Sea salt
  • Pepper

The rest:

  • 1 Large tomato (preferably heirloom if making in the summer)
  • Ciabata loaf
  • 6 strips bacon
  • 1 cup arugula
  • Red pepper flakes
  • 3 tbsp butter

Instructions 

  • Slice and season the tomatoes: Slice tomatoes and season with salt, pepper, red pepper flakes. See aside while you make everything else.
  • Make the brown butter lobster: Melt butter on low heat, stirring often. After a few minutes the butter will start to foam and smell like caramelization. Once it starts to brown, add lobtster and season with salt and pepper.
  • Cook lobster in 2 tbsp of the butter on low for about 4-5 minutes, just to get it nice, warmed and combined.
  • Cook the bacon: Cook strips of bacon in a pan on medium heat about 3-4 min per side or to your desired crispiness.
  • Make mayo: Combine mayo, crème fraîche, tarragon, lemon juice, dijon, salt and pepper in a bowl and season to taste.
  • Toast and assemble: Toast ciabatta loaf, add mayo, arugula, tomato, bacon and buttery lobster. Close sandwich and enjoy!
