Easy to make key lime and blueberry compote tartlets.

If you love key lime like me, this one is absolutely for you! Say hello to key lime and blueberry compote tartlets. They perfectly combine the zesty kick of key lime with the sweetness of blueberries, creating a delightful treat for any occasion! I’m a huge fan of key lime pie, but these little tarts give you that same satisfaction without all the hard work. If you know me, I am NOT a baker but this is super easy to make and SO GOOD. The secret lies with buying pre-made puff pastry shells and Stonewall’s Kitchen’s Key Lime Curd, which makes this recipe a breeze! The blueberry compote is so quick to whip up with just a handful of ingredients. Just add blueberries, lemon, hot honey, some sugars thyme and water and you’re good to go! The compote adds which adds a vibrant burst of color and flavor to each bite. Be sure to make these for the next party you’re hosting or just for a fun sweet treat! Key lime and blueberry compote tartlets
Ingredients
- Puff pastry shells
- Stonewall kitchen key lime curd
- A little flour
- Cooking spray
The blueberry compote:
- Blueberries
- Juice of half a lemon
- Hot honey
- 1/8 cup water
- About 4 sprigs of thyme
- 1/4 cup sugar
Instructions
- Preheat oven according to puff pastry box.
- Make your blueberry compote but adding fresh blueberries to a pan with lemon juice, water, sugar, hot honey and thyme. Cook on low hear until blueberries start to breakdown, about 12 min. Let cool.
- Add flour to a clean surface and let puff pastry soften. Spread out and cut into squares, sizing based on the size of your pastry tin. Spray tin and add in pastry squares. As about 1/2 a tsp of key lime curd and 1/2 a tsp of blueberry compote.
- Bake according to puff pastry box, about 10 min. Remove and serve right away. Enjoy!
