An easy way to level up your toast game and get more protein- these are my jammy egg and spicy cucumber toasts.

The Deets:
I am always trying to level up my toast game, and it’s a bonus if I can get more protein while I’m at it. This toast is the best of everything, jammy eggs, a spicy and sweet cucumber salad and of course, crispy sourdough bread.

Jammy Egg & Spicy Cucumber Toasts
Ingredients
- 1 Slice of sourdough bread
- EVOO
- 1 Persian cucumber
- 1 Scallion
- 1 Radish
- 2 Eggs
- 1 tbsp Kewpie mayo
- 1 tsp Soy sauce
- 1/2 tsp Sweet chili sauce
- 1/2 tsp Sriracha
- Furikake for topping
Instructions
- Bring a pot of water to a boil. While waiting for the water to boil. Add eggs to water and cook for 7.5 min for a slightly jammy egg. Remove from water and add to an ice bath. Peel and break into pieces and add to a bowl.
- Make cucumber salad by combining sliced cucumbers, scallions and radish in a bowl. Add toppings: kewpie mayo, soy sauce, sriracha and sweet chili sauce. Add a sprinkle furikake.
- Coat bread in olive oil and cook for 2-3 min per side until golden brown. Top with cucumber salad and sliced jammy eggs. Season with more furikake. Enjoy!
