Bring a pot of water to a boil. While waiting for the water to boil. Add eggs to water and cook for 7.5 min for a slightly jammy egg. Remove from water and add to an ice bath. Peel and break into pieces and add to a bowl.
Make cucumber salad by combining sliced cucumbers, scallions and radish in a bowl. Add toppings: kewpie mayo, soy sauce, sriracha and sweet chili sauce. Add a sprinkle furikake.
Coat bread in olive oil and cook for 2-3 min per side until golden brown. Top with cucumber salad and sliced jammy eggs. Season with more furikake. Enjoy!
