Indulge in the perfect start to your Sunday morning with a delightful twist on the classic egg salad. This version of a typical egg salad has creme fraiche, dijon, capers, lemon juice, and lots of dill for a mayo-free, jammy egg delicious combo. This style of egg is one of my favorite things to make as an easy protein to add to breakfast or lunch. The jammy egg is somewhere between a hard boiled and soft boiled egg. The egg white is fully cooked but the middle is a nice soft, shall we say, jam texture?! It’s almost creamy so it’s easy to spread on toast. Imagine spreading this creamy goodness over a slice of warm toast – pure bliss! From breakfast bowls to savory tarts, the possibilities are endless. Add smoked salmon and avocado for a decadent brunch and lots of crispy bread. From breakfast bowls to savory tarts, the possibilities are endless. The egg salad

  • 2 tbsp creme fraiche
  • 1 tbsp whole grain dijon mustard
  • 1 tbsp chopped caper berries (or regular capers)
  • 1 small shallot, diced
  • lots of fresh dill
  • 1/2 a lemon
  • EVOO
  • 3 eggs
  • 1 tsp poppy seeds
  • sea salt
  • pepper

The rest

  • bread of choice
  • smoked salmon 
  • avocado
  • olive oil


  • Bring a pot of water to a boil. While waiting for the water to boil. Add eggs to water and cook for 7.5 min for a slightly jammy egg. Remove from water and add to an ice bath. Peel and slice into 4 pieces
  • Combine egg salad ingredients in a bowl and season to taste. Add egg slices and combine. Serve in a small bowl surrounded by whatever else you want. It is perfect with crispy bread, smoked salmon and avocado. Enjoy!
