Jalapeño, melon and halloumi salad with a cayenne lime dressing
Ingredients
Cayenne lime dressing
- 2-3 limes, juiced
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- sea salt and pepper
The rest
- melon slices
- halloumi slices
- Jalapeño slices
Instructions
- Slice skin off melon and chop into arc shaped pieces
- In a medium skillet, cook halloumi pieces for about 4 min per side or until golden brown. You can use oil if you want, but its cooks just fine without out. Add to melon and top with sliced jalapeño.
- Whisk together dressing ingredients and pour overtop. Enjoy!
