Jalapeño, melon and halloumi salad with a cayenne lime dressing

Ingredients

Cayenne lime dressing

  • 2-3 limes, juiced
  • 1 tsp cayenne pepper
  • 2 tbsp olive oil
  • sea salt and pepper

The rest

  • melon slices
  • halloumi slices
  • Jalapeño slices

Instructions

  • Slice skin off melon and chop into arc shaped pieces
  • In a medium skillet, cook halloumi pieces for about 4 min per side or until golden brown. You can use oil if you want, but its cooks just fine without out. Add to melon and top with sliced jalapeño.
  • Whisk together dressing ingredients and pour overtop. Enjoy!
