Herby goat cheese veggie sandwich

You know by now that I am a huge fan of perfecting the ultimate sandwich to spice up your lunch routine… This is a herby, pickly veggie sandwich with a goat cheese and a green goddess yogurt spread.

Here’s how to make it:

Ingredients

The green goddess spread:

  • 3 scallions
  • 2 tbsp yogurt
  • Juice from half a lemon
  • A few sprigs of dill
  • 1/4 cup basil
  • 1 tbsp olive oil
  • Sea salt and pepper

The rest:

  • Tomatoes
  • Cucumber
  • Radishes
  • Banana peppers
  • 1/2 an avocado
  • Spinach
  • 1 tbsp goat cheese
  • Bread of choice
  • Olive oil for toasting

Instructions

  • Combine spread ingredients in a food processor and blend until smooth and combined. Season to taste.
  • Slice all veggies to your liking. Coat bread in olive oil and cook for 2-3 min per side.
  • Add spread to one side of the spinach, and goat cheese to the other. Add all you veggies and season with salt and pepper. Add a little squeeze of lemon if you like. Enjoy!
