Herby Goat Cheese Veggie Sandwich
Ingredients
The green goddess spread:
- 3 scallions
- 2 tbsp yogurt
- Juice from half a lemon
- A few sprigs of dill
- 1/4 cup basil
- 1 tbsp olive oil
- Sea salt and pepper
The rest:
- Tomatoes
- Cucumber
- Radishes
- Banana peppers
- 1/2 an avocado
- Spinach
- 1 tbsp goat cheese
- Bread of choice
- Olive oil for toasting
Instructions
- Combine spread ingredients in a food processor and blend until smooth and combined. Season to taste.
- Slice all veggies to your liking. Coat bread in olive oil and cook for 2-3 min per side.
- Add spread to one side of the spinach, and goat cheese to the other. Add all you veggies and season with salt and pepper. Add a little squeeze of lemon if you like. Enjoy!
