You know by now that I am a huge fan of perfecting the ultimate sandwich to spice up your lunch routine. With each creation, I strive to bring a fresh, exciting twist to classic flavors, making every bite an adventure. Today, I am thrilled to share one of my newest and most delightful concoctions: a herby, pickly veggie sandwich that’s sure to become a lunchtime favorite. This sandwich is a celebration of vibrant, fresh ingredients carefully selected to create a blend of flavors and textures. At its heart is a generous layer of goat cheese, known for its creamy texture and tangy flavor, which perfectly complements the rest of the ingredients. The whole veggie sandwich is then layered in a green goddess spread. The spread is super easy to make — add scallions, yogurt, lemon, dill, basil, olive oil and salt/pepper to a food processor. Blend until creamy! Add the spread to your bread and then layer on the vegetables. I did cucumber, tomato, radish, banana peppers, avocado, and spinach. It’s fully loaded with so many healthy goodies!

Herby Goat Cheese Veggie Sandwich

Ingredients

The green goddess spread:

  • 3 scallions
  • 2 tbsp yogurt
  • Juice from half a lemon
  • A few sprigs of dill
  • 1/4 cup basil
  • 1 tbsp olive oil
  • Sea salt and pepper

The rest:

  • Tomatoes
  • Cucumber
  • Radishes
  • Banana peppers
  • 1/2 an avocado
  • Spinach
  • 1 tbsp goat cheese
  • Bread of choice
  • Olive oil for toasting

Instructions 

  • Combine spread ingredients in a food processor and blend until smooth and combined. Season to taste.
  • Slice all veggies to your liking. Coat bread in olive oil and cook for 2-3 min per side.
  • Add spread to one side of the spinach, and goat cheese to the other. Add all you veggies and season with salt and pepper. Add a little squeeze of lemon if you like. Enjoy!
