Green Goddess Tuna Melt

This Green Goddess Tuna Melt is a healthy, high protein tuna melt that has a creamy crunchy cottage cheese tuna salad, melty dill havarti and lots of greens.

Ingredients

Serves 2 melts

The tuna salad:

  • 5 oz spicy or regular canned tuna
  • 1/2 cup Cottage Cheese 
  • 1 tbsp lemon juice + more as needed
  • 1 tsp olive oil 
  • 1 tsp dijon mustard
  • 1 stalk of celery, chopped 
  • Chopped herbs of choice (I like parsley, basil, scallions, chives)
  • Sea salt 
  • Pepper

Instructions 

  • Preheat oven to broil.

The tuna salad: Combine tuna salad ingredients into a bowl until combined. Season to taste. You might want to adjust depending on how creamy or citrusy you want it to be.

  • Make sandwich: Add shredded dill havarti cheese to slices of brioche bread. Add to a baking sheet and broil for about 2-3 min or until cheese has melted and browned slightly. Add scoops of tuna salad to the sandwich and top with microgreens or arugula. Close and enjoy!
