Green Goddess Salad with a Simple Lemony Dressing

This Green Goddess Salad is the perfect reset lunch.

The Deets

One of my favorite reset salads is my green goddess salad with a simple lemony Greek yogurt dressing. You can use a Greek Yogurt like one from Chobani. Everything is added directly to a large bowl to make it easy and then topped with chopped toasted walnuts and breadcrumbs. I layered the yogurt dressing on the bottom of the bowl and then added the goods on top. This make it super easy to toss the salad and get each green covered in the dressing. The toasted walnuts and breadcrumbs add for a little crunch, which I always love in a salad. After 10 days away on a work trip, I desperately craved a simple, healthy bowl of greens, and this did not disappoint. This salad is filled with green goddess goodness — so many vegetables!! I chose to add cucumbers, olives, avocado, spinach, spring peas, scallions, and Cannellini beans, but you can really add whatever veggies you want! It’s super hearty and will have you feeling full for a long time. This is the perfect salad to make for lunch or make a larger portion and bring to your next dinner party. Green Goddess Salad with a Simple Lemony Dressing

The greek yogurt dressing:

  • 3 tbsp full fat greek yogurt
  • 1 healthy squeeze of lemon and more to taste
  • A handful of dill
  • A nice glug of olive oil
  • Sea salt
  • Pepper
  • Red pepper flakes

The rest: 

  • Chopped cucumber
  • Chopped castelvetrano olives
  • Chopped avocado
  • Spinach
  • Spring peas
  • Shaved parmesan
  • Cannellini beans
  • Scallions
  • Walnuts
  • Olive oil
  • Breadcrumbs


  • Preheat oven to 400. Chop up all your veggies. Add dressing ingredients to a large bowl. Once added, stir to combine and season to taste. Smooth out along the bottom of the bowl.
  • Add walnuts to pan and drizzle with olive oil, salt and pepper. Cook for about 7 min (checking every few min to ensure they don’t burn). Remove and roughly chop.
  • Add all greens, parmesan and beans to the bowl. Mix everything to combine and top with the toasted walnuts and breadcrumbs for some added crunch. Enjoy!
