The Deets:
This is what you make when you want to switch up your taco rotation and mix in a bright, citrusy vegetarian taco that is super tasty– these are my Florida Grapefruit and fried halloumi tacos using Florida Grapefruits. The grapefruit has such a good balance of sweet and tartness and is the ultimate combo with the salty halloumi cheese. Top with the creamy avocado sauce and the crunchy cucumber jalapeno mix at that’s it! Definitely save this to make for Spring, it’s so bright and just so so good.

Servings 6 Small tacos

Ingredients

The Avocado Crema:

  • 1 Avocado
  • 1/2 Cup Sour cream (or Greek yogurt)
  • 1/4 Cup Chopped cilantro
  • 1/2 Lime
  • Sea salt
  • Pepper

The Rest:

  • 6 Small Tortillas
  • 6 Slices of halloumi cheese
  • 2 Persian cucumbers
  • 1 Jalapeño
  • 3 Radishes
  • 1 tbsp Olive oil
  • 1/2 Lime
  • Sea salt
  • Pepper
  • Sesame seeds for topping

Instructions

  • Slice halloumi and add to pan. You can add a drizzle of olive oil if you want, but they also can cook without any oil. Cook on medium heat for about 2-3 min per side or until the cheese is browned. Remove and set aside.
  • Using a vegetable slicer, slice the cucumbers into thin strips. Combine in a bowl with sliced jalapeño and radish. Drizzle with olive oil and squeeze half a lime over top. Season with salt and pepper. Set aside.
  • Make the creamy avocado crema by combining avocado, sour cream, cilantro, lime, salt and pepper in a food processor. Blend until smooth and combined. Season to taste.
  • Slice the ends of the Florida Grapefruit. Using a small knife, supreme the grapefruit, discarding the membrane.
  • In a pan or in the oven, heat tortillas so they are warmed. Add crema to each taco, followed by a few slices of halloumi, Florida Grapefruit and the cucumber slaw. Top with sesame seeds and enjoy!
