This is a healthy lunch or snack option I have been loving lately! Brown butter heirloom tomatoes with fresh mint on sourdough bread. This is so simple and easy to do! It’s something a little different to do if you have too many tomatoes this month. I’m always looking for ways to use ingredients I already have at home. The flavor combo may seem a little unusual but trust me, it’s delish. You truly only need some bread (I used sourdough), heirloom tomato, salted butter, olive oil, and fresh mint. You’ll cook up your butter until it’s brown. Slice your tomatoes and add to the toast! Pour the butter over the tomatoes and toast and voila! Lunch is served. It’s fresh and sweet, but also savory. I sprinkled some sea salt flakes (my favorite is Maldon)at the very end and it gives such a nice little salty touch. This is a perfect lunch or mid-afternoon snack, especially in the summer during peak tomato season! Brown butter heirloom tomato toast
Ingredients
- Sourdough bread
- 1 heirloom tomato
- 1 tbsp good salty butter
- Olive Oil
- Fresh mint
- Flaky se salt
Instructions
- Melt butter over medium heat. When it starts to sizzle and foam, stir until it begins to turn brown and smell super sweet. At that point turn off the heat,
- Coat bread in olive oil and cook for 2-3 min in a skillet.
- Brush bread with brown butter and top with tomatoes. Pour more brown butter over top along with sliced fresh mint and sea salt.
