Broccoli Rabe & Sausage Breakfast Sandwich

This sandwich is loosely based off of one of my favorite combinations, sausage, garlic and broccoli rabe- this version does a breakfast sausage and adds Swiss cheese and soft scrambled eggs.

The Deets:
One of my favorite classic Italian pasta dishes is Orecchiette with Sausage and Broccoli Rabe. It’s all in the simplicity of the ingredients, and the combination is truly so so good. When I had it recently, I had this idea to turn it into a delicious breakfast sandwich by using a breakfast sausage instead of the classic hot Italian sausage. So, I added some hot honey, fennel and herbs to the sausage, and then cooked it the same way I would the pasta dish. I then served on soft brioche bread with melted Swiss cheese, soft scrambled eggs and a sriracha mayo.

Ingredients

The Breakfast Sausage

  • 8 Oz Ground Italian sausage
  • 1 Tsp Fennel seeds
  • 1/2 Tsp Fresh thyme
  • 1/2 Tsp Fresh chopped sage
  • 1/2 Tsp Fresh chopped rosemary
  • 1 Tsp Hot honey
  • Sea salt
  • Pepper

The rest:

  • 3/4 Cup Chopped broccoli rabe
  • 5 Slices of Swiss cheese
  • 3 Cloves Garlic
  • 2 Slices bread of choice This is a brioche
  • 1 Tbsp Sriracha
  • 1 Tbsp Mayo
  • 2 Eggs
  • 1 Tbsp Butter
  • EVOO

Instructions

  • Add sausage to a bowl with the rest of the breakfast sausage ingredients and mix until thoroughly combined. Mince garlic and chop broccoli rabe into bite sized pieces.
  • Add olive oil to a skillet and then add sausage. Cook on medium heat, breaking up the sausage with a wooden spoon. Add in garlic and cook until sausage is nicely browned.
  • Add in broccoli rabe and cook for another 2-3 min until the broccoli rabe is cooked slightly but still has a nice bite.
  • Top with slices of Swiss cheese and reduce heat and cover to let the cheese melt.
  • Crack eggs in a bowl and whisk. Add butter to a skillet and add eggs once the pan is hot. Season with salt and pepper. Using a spatula, fold the eggs toward the center so they form ribbons. Turn off heat and let them finish cooking.
  • Toast bread and make sriracha mayo by combining in a bowl. Spread on bread and then top with soft scrambled eggs, and sausage broccoli combo. Enjoy!
