Add sausage to a bowl with the rest of the breakfast sausage ingredients and mix until thoroughly combined. Mince garlic and chop broccoli rabe into bite sized pieces.
Add olive oil to a skillet and then add sausage. Cook on medium heat, breaking up the sausage with a wooden spoon. Add in garlic and cook until sausage is nicely browned.
Add in broccoli rabe and cook for another 2-3 min until the broccoli rabe is cooked slightly but still has a nice bite.
Top with slices of Swiss cheese and reduce heat and cover to let the cheese melt.
Crack eggs in a bowl and whisk. Add butter to a skillet and add eggs once the pan is hot. Season with salt and pepper. Using a spatula, fold the eggs toward the center so they form ribbons. Turn off heat and let them finish cooking.
Toast bread and make sriracha mayo by combining in a bowl. Spread on bread and then top with soft scrambled eggs, and sausage broccoli combo. Enjoy!
