This anchovy herby butter is full of so much flavor!

Here’s a fun and easy lunch idea for today: Anchovy herby butter and radish toast. This is so quick, easy, and nutritious! All you’ll need is some Fishwife anchovies, herb of choice (tarragon, chives, thyme or dill will work), softened butter, radishes, and toasted bread. You’ll simply combine your anchovies, herbs, and butter in a bowl to make this spread and then layer it on to a toast of your choice. I like a sourdough for this type of thing. Make sure to cut your radishes super thin, they add a nice little crunch to this toast and some color. This toast is so light, but hearty and full of flavor. I love using anchovys in my recipes to bring out a different flavor. You could also cut these toasts up and serve as crostinis for a party app, which would be fun and springy! Anchovy herby butter and radish toast
Ingredients
- @fishwife anchovies in Spanish EVOO
- Herbs of choice (this is tarragon and chives, but you could do thyme, dill etc)
- A few tbsp of butter, preferably softened
- 2-3 radishes, sliced thin
- Sea salt and pepper
- Bread of choice
- EVOO
Instructions
- Coat bread in olive oil and cook for 2-3 min per side.
- Make butter by combining butter, herbs, anchovies into a bowl. Season with a little salt and pepper. Mix until creamy and combined.
- Add to toast and then top with thinly sliced radishes. Garnish with more herbs and enjoy!
