This has all the sweetness of a summer BLT but with jammy tomatoes, a roasted garlic green goddess spread, arugula and of course, crispy bacon.

The Deets:
This is kind of a wintery take on a BLT- this is my roasted garlic green goddess sandwich made with a goat cheese pesto spread, jammy cherry tomatoes, arugula and of course, a few pieces of bacon. This has all the sweetness of a summer tomato but jammy and has a delish goat cheese pesto spread and crispy bacon.
The jammy tomatoes:
I like to use Sunset Sugar Bomb tomatoes for this because they are hands down the sweetest tomato and taste just like a tomato in the summer during peak season. If you are making this in winter, I would definitely opt for a sweeter tomato like that. If you make this in the summer, go for an in season heirloom!
The pesto:
I like to use homemade pesto, but if you use store bought, my absolute favorite is Gotham Greens. I swear it is impossible to find good store bought pesto, but Gotham greens really is the best. They use plenty of garlic, fresh basil and of course good olive oil and parmesan cheese. Highly recommend.

Green goddess BLT
Ingredients
The green goddess spread:
- 1 Head of roasted garlic
- 2 tbsp Pesto (homemade or store bought)
- 1/4 cup Greek yogurt
- 4 oz Goat cheese You could sub this with cottage cheese for a protein + alternative
- Salt
- Pepper
The rest
- 1 cup Cherry tomatoes
- Bread of choice (this is a brioche loaf)
- 1/4 cup Good olive oil
- 3 Slices of bacon
- Handful of arugula
Instructions
- Preheat oven to 400. Slice the top off your head of garlic. Add to a cocotte with cherry tomatoes. Add a nice glug of olive oil and season with salt and pepper. Bake for about 30- 35 min or until the garlic is softened and the tomatoes are jammy and browned.
- Combine green goddess spread ingredients to a food processor, including the now roasted garlic. Squeeze that out of the skin into the processor. Blend until combined. Season to taste.
- Add bacon slices to a pan and cook for about 5 min per side on medium heat (or to desired crispiness) Transfer to a paper towel lined plate.
- Toast bread and add spread to both pieces. Add jammy tomatoes, slices of bacon and a handful of arugula. Close sandwich and that's it. Enjoy!
