Green goddess BLT

Ingredients

The green goddess spread:

  • 1 Head of roasted garlic
  • 2 tbsp Pesto (homemade or store bought)
  • 1/4 cup Greek yogurt
  • 4 oz Goat cheese You could sub this with cottage cheese for a protein + alternative
  • Salt
  • Pepper

The rest

  • 1 cup Cherry tomatoes
  • Bread of choice (this is a brioche loaf)
  • 1/4 cup Good olive oil
  • 3 Slices of bacon
  • Handful of arugula

Instructions

  • Preheat oven to 400. Slice the top off your head of garlic. Add to a cocotte with cherry tomatoes. Add a nice glug of olive oil and season with salt and pepper. Bake for about 30- 35 min or until the garlic is softened and the tomatoes are jammy and browned.
  • Combine green goddess spread ingredients to a food processor, including the now roasted garlic. Squeeze that out of the skin into the processor. Blend until combined. Season to taste.
  • Add bacon slices to a pan and cook for about 5 min per side on medium heat (or to desired crispiness) Transfer to a paper towel lined plate.
  • Toast bread and add spread to both pieces. Add jammy tomatoes, slices of bacon and a handful of arugula. Close sandwich and that's it. Enjoy!

Notes

To make this a little healthier, you could serve as a lettuce wrap instead of bread. It would also make it even more of a BLT!
