This shaved egg over smoked salmon on a bagel is a fun way to elevate brunch!

Shaved Egg Smoked Salmon Bagel
Ingredients
The egg salad:
- 2 tbsp creme fraiche or Greek yogurt
- 1 tbsp chopped caperberries or capers
- Lots of fresh dill
- Drizzle of olive oil
- 1/2 lemon
- Salt
- Pepper
- 2 eggs
The rest:
- Bagel
- 1/2 avocado
- Smoked salmon
- Everything but the bagel seasoning
Instructions
- Bring a pot of water to a boil. Carefully, add eggs and cook for 8 min for a slightly jammy egg. You don’t want it too jammy or it will be hard to grate. Remove from water and add to an ice bath.
- Combine egg salad ingredients to a bowl. Using a grater, grate eggs into a bowl. Give everything a mix until smooth and combined.
- Slice bagel and scoop out middle. Toast and add scoops of egg salad, top with avocado, smoked salmon and everything but the bagel seasoning. Enjoy!
