- Halloumi: The star of the show. This is a low moisture cheese that you can actually griddle until golden brown. It’s chewy, a little salty, and pretty mild in flavor. We find it so delicious!
- Large eggs: We scramble these to add into the sandwich, we love the contrast in texture with the halloumi and veggies.
- Store-bought pesto: Adds great herby flavor to every bite. Use your favorite brand here, ours is Gotham Greens.
- Arugula: Peppery and fresh to compliment the halloumi and egg nicely.
- Tortilla of choice: We are flour tortilla fans, but you can also choose a low carb or whole wheat tortilla here too.
- Avocado: Adds creaminess to every bite.
- Lemon: A hint of acid that brightens all of the flavors.
- Red onion: Another crunchy ingredient that pairs nicely with the halloumi and egg.
How to Make this Halloumi Wrap Recipe
1. Slice halloumi and add to a medium skillet. Cook for 2-3 min per side and then add in a scoop of pesto.

2. Whisk eggs in a bowl and pour overtop the halloumi once it has browned. Turn burner down to low and let cook for about 2 min or until the eggs begin to set.

3. Add tortilla over top. Using a spatula or a plate, flip.

4. Add whatever fix-ins you want on the inside- I did arugula, red onion, avocado and a squeeze of lemon. Fold tortilla and let cook for another 2-3 min or until tortilla is nicely browned on both sides. Slice and enjoy!

- Swap the sauce. We also love a good homemade aioli, whether it’s garlic, spicy, or red pepper, there are so many options! A great hot sauce is also delicious.
- Be sure to not overcook the eggs. Right when you see the soft curds form, remove the pan from the heat. The eggs overcook quickly and you want to make sure they remain soft and fluffy for the wrap.
- Warm the tortilla for easy folding. We usually microwave it for a few seconds to help make the assembly even easier.
- Add more veggies if desired. We love to even make this sandwich savory for lunch by adding roasted red peppers, tomato, even bacon!
Storage
It’s best to enjoy this halloumi wrap right away, but you can also store it too. Store this halloumi egg wrap wrapped in foil or plastic wrap in the fridge for up to one day. You can reheat it easily in the oven, or better yet, the air fryer to make it crispy and warm.
