
This avocado toast really has it all: smashed avocado on a multigrain sourdough with radishes, sautéed shiitakes and furikake. There is so much flavor and a great little snack!
Here’s how to make it:

Avocado toast with radishes, sautéed shiitakes and furikake
Ingredients
- 1/2 cup shiitake mushrooms, sliced
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sesame seeds
- 1/2 avocado per toast
- Lemon squeeze
- 1 thinly sliced radish per toast
- furikake for topping
- Bread of choice for toasting
- Olive oil
Instructions
- Combine soy sauce, sesame oil and rice vinegar in a bowl. Add sliced mushrooms and then add to a skillet on medium heat. Cook until soft.
- Coat toast in olive oil and cook in a pan for 2-3 min per side.
- Peel half and avocado and mash in a bowl with furikake, a little dash of sesame oil. Spread on top of bread.
- Add radishes on top of avocado and then top mushrooms. Finish with sesame seeds and enjoy!
