Whipped Cottage Cheese Dip with Peaches
Ingredients
The cottage cheese spread:
- 1 cup cottage Cheese
- 1/8 cup hot honey (or regular honey)
- Drizzle of olive oil
- 1/4 cup fresh basil
- Sea salt
- Pepper
The peaches:
- 3 peaches
- 3 tbsp butter
- 1 tbsp hot honey
The rest:
- 1/3 cup pistachios
- Fresh basil for topping
- Crispy bread or whatever you want to serve with
Instructions
- Prepare the peaches: Melt butter and hot honey in a pan. Slice peaches and add to pan. Cook in medium heat until peaches soften, about 2-3 min. Careful to not leave them cooking for too long, you don’t want them to get too mushy.
- Make the cottage cheese dip: Blend all the cottage cheese dip ingredients in a food processor until smooth, creamy and combined. Season to taste.
- Scoop cottage cheese on a large serving plate and spread into an even layer. Drizzle with a little hot honey and olive oil for texture on the plate. Spoon peaches overtop. Add fresh basil and crushed pistachios. Serve with crispy sourdough bread. Enjoy!
