Whipped Cottage Cheese Dip with Peaches

This Whipped Cottage Cheese Dip with Peaches is an easy, no fuss summer app, that comes together in less than 20 minutes and is such a crown pleaser.

Ingredients

The cottage cheese spread:

  • 1 cup cottage Cheese
  • 1/8 cup hot honey (or regular honey)
  • Drizzle of olive oil 
  • 1/4 cup fresh basil 
  • Sea salt
  • Pepper

The peaches:

  • 3 peaches
  • 3 tbsp butter
  • 1 tbsp hot honey 

The rest:

  • 1/3 cup pistachios
  • Fresh basil for topping 
  • Crispy bread or whatever you want to serve with 

Instructions 

  • Prepare the peaches: Melt butter and hot honey in a pan. Slice peaches and add to pan. Cook in medium heat until peaches soften, about 2-3 min. Careful to not leave them cooking for too long, you don’t want them to get too mushy.
  • Make the cottage cheese dip: Blend all the cottage cheese dip ingredients in a food processor until smooth, creamy and combined. Season to taste. 
  • Scoop cottage cheese on a large serving plate and spread into an even layer. Drizzle with a little hot honey and olive oil for texture on the plate. Spoon peaches overtop. Add fresh basil and crushed pistachios. Serve with crispy sourdough bread. Enjoy!
