Whipped cottage cheese crostinis with cranberry jam and prosciutto
Ingredients
The whipped cottage cheese:
- 1 1/2 cups Breakstones Cottage Cheese
- 2 tbsp Hot or regular honey
- 1 tbsp Fresh thyme
- A squeeze of lemon
- A drizzle of olive oil
- Sea salt
- Pepper
The jam:
- 1 cup Cranberries
- 2 Sprigs of rosemary
- 1/4 cup Sugar
- 2 tbsp Lemon juice
- A sprinkle of pectin
The rest:
- 5 Slices of toast (or 10 baguette slices)
- 1/4 cup Crushed pistachios
- 10 Slices of prosciutto
Instructions
- Preheat oven to 375. Add rosemary and cranberries. Squeeze with lemon juice, sugar and mix until combined. and bake for 10 min.
- Remove from oven and add in pectin. Stir to make sure it’s combined and continue to bake for another 15 min or so. Remove, and using a spoon, mix together and let cool. The jam will congeal as it cools.
- Meanwhile, make the whipped cottage cheese by combining ingredients to a blender or food processor. Blend until smooth and creamy.
- Toast sourdough slices and add spread whipped cottage cheese on top of each one. Add a few spoonfuls of jam. Slice and arrange on a serving dish. Top with a slice of prosciutto and crushed pistachios. Enjoy!
