Preheat oven to 375. Add rosemary and cranberries. Squeeze with lemon juice, sugar and mix until combined. and bake for 10 min.
Remove from oven and add in pectin. Stir to make sure it’s combined and continue to bake for another 15 min or so. Remove, and using a spoon, mix together and let cool. The jam will congeal as it cools.
Meanwhile, make the whipped cottage cheese by combining ingredients to a blender or food processor. Blend until smooth and creamy.
Toast sourdough slices and add spread whipped cottage cheese on top of each one. Add a few spoonfuls of jam. Slice and arrange on a serving dish. Top with a slice of prosciutto and crushed pistachios. Enjoy!

Note: you could use a baguette, or slices of sourdough cut in half for this. Both would be delicious!
