This watermelon tajin toast is a refreshing summer treat!

This little creation was inspired by my recent love of making pan con tomate, which is a classic Spanish dish that’s incredibly simple yet bursting with flavor. I was playing around with the idea of how I could put a summery spin on it and immediately thought of watermelon. Watermelon, like tomatoes, is juicy and refreshing, but it’s full of even more liquid, so grating it like you would for traditional pan con tomate wasn’t going to work. Instead, I decided to dice it into small cubes, making sure to keep the pieces bite-sized for easy topping on bread.
After dicing the watermelon, I drizzled it with a high-quality olive oil to add richness and a velvety texture, and then sprinkled some flaky sea salt over the top to balance out the sweetness and enhance the natural flavors. The salt really brings out the juiciness of the watermelon, making each bite more flavorful. To give it a bit of a kick and a twist, I decided to add some Tajín, which adds a tangy, spicy note with its blend of chili powder and lime. It’s the perfect complement to the sweetness of the watermelon.
Then, to brighten things up even more, I squeezed in some fresh lime juice, which adds a zesty acidity that cuts through the richness of the olive oil and lifts the whole dish. For a bit of crunch and to add a nutty flavor, I tossed in some crushed pistachios. The pistachios bring a satisfying texture that contrasts beautifully with the softness of the watermelon and the smoothness of the olive oil. Altogether, this combination is a delightful mix of sweet, salty, tangy, and spicy with a bit of crunch—perfect for a refreshing summer snack or an appetizer for a warm-weather meal. It’s an easy dish that feels elevated, and the flavors are truly irresistible!
Here’s how to make it:

Ingredients
- bread of choice (this is a frances pan loaf)
- EVOO
- 3 tbsp farmers cheese
- 1/2 cup diced watermelon
- 1 tsp tajin
- 1/2 lime, juiced
- 1/2 cup pistachios
- Flaky sea salt
- pepper
Instructions
- Coat bread in olive oil and cook on medium heat for about 2-3 min per side
- Dice watermelon and add to a bowl. Drizzle with olive oil, tajin, a little sea salt, pepper, and lime juice. Give a light stir to combine
- Add farmers cheese to toast. Top with watermelon mixture
- Roughly chop some pistachios and add to the toast. Drizzle with a little lime juice and enjoy!
