This recipe is the perfect way to use Thanksgiving leftovers or bring a refreshing twist to your lunch routine during the week. It starts with a hearty slice of fresh sourdough, toasted to golden perfection for a satisfying crunch. I spread a generous layer of Stonewall Kitchen Sriracha Aioli across the warm bread, adding a flavorful kick that pairs beautifully with the other ingredients. Next, I layered thin slices of juicy, fresh turkey, followed by a handful of shredded smoked cheddar cheese, which adds a rich, savory depth. For a touch of crisp sweetness, I added thinly sliced apples.

To add a bit of freshness, I tossed some peppery arugula in a simple dressing made from lemon juice, olive oil, salt, and pepper. Turkey Apple & Smoked Cheddar Sandwich

Ingredients

  • Sourdough bread 
  • Granny Smith apple 
  • Sliced turkey 
  • Shredded smoked cheddar cheese 
  • A few slices of avocado
  • Arugula
  • A few squeezes of lemon 
  • Sea salt
  • Pepper
  • A drizzle of olive oil 
  • Sriracha aioli 

Instructions 

  • Preheat oven to 400.
  • Toast 2 slices of bread on one side in an oil coated medium skillet for about 3 min. Remove and add aioli, turkey, cheddar, avocado, sliced apples to the toasted side. I like to toast both sides of my bread, but you could easily skip this step if you want. 
  • Add sandwich to a parchment lined baking sheet and bake for about 5 min or until the cheese is melted.
  • Meanwhile add fresh cleaned arugula to a bowl. Drizzle with olive oil, lemon juice, salt and pepper. Give it a nice toss and add to turkey melt. Close and cut sandwich, and enjoy!
