This is a really fun way to level up a traditional BLT by adding some good, smoky bacon, adding a pesto mayo and of course, turkey!

The Deets:
This sandwich is an ode to a small country store in Vermont called Singletons that has some of the best smoked meats I’ve ever had. The bacon is thick cut so so smoky and just makes any sandwich. I luckily bought some to take home and made this stacked BLT with a pesto mayo that I added a little pickly brine to and unexpected cheddar. This was sooo good and if you ever make it up to Singleton’s this is your sign to stock up!

Smoky Pesto Turkey BLT
Ingredients
- 2 Slices sourdough bread
- 2 tbsp Pesto Homemade or store bought.
- 1 tbsp Mayo
- A few drops of pickled brine I used banana pepper brine, but you could use pickles, or really anything you want
- 3 Slices of turkey
- 3 Slices of bacon
- Red onion
- Banana peppers
- Lettuce
- Good olive oil
- 2 Slices of tomato
Instructions
- Coat bread in olive oil and cook for 2-3 min per side until golden brown. Remove from pan and set aside.
- Add bacon to same pan and cook on medium heat for about 4 min per side or until desired crispiness. Transfer to a paper towel lined plate.
- Make pesto mayo by combining mayo, pesto and pickle brine.
- Spread pesto mayo on toast and add turkey, slices of tomato, bacon, red onion, lettuce, and banana peppers. That's it! Enjoy!
